In a little oasis of greenery and tranquillity deep in the Var countryside, a pretty 16th century stone house lies hidden away in a vast wooded park. Beside a swimming pool basking in the southern sunshine, Sébastien Sanjou proposes a cuisine that is sophisticated in appearance, although its flavours assert themselves with moving simplicity: “Steamed blue lobster in sweet almond milk” “asparagus and iced cream”… Meticulous dishes, impeccably prepared with the immense ambition of fulfilling food-lovers and surprising connoisseurs.
